As the story goes, Crackerbarrel gave Mrs. Bay her start in her own kitchen making bread for their stores. After a little tweaking, she came up with winning recipe that they serve in the restaurants today. They use it for their sandwiches and french toast. It toast perfectly, therefore, your toast will never be soggy. I can't tell the difference in my french toast at home and CBRL's!I go by there once a week and you can get it for only $1.25. It goes well with a lot of meals; we are pretty southern around here, so most meals have to have bread! My kids love it now too. They are pretty specific about bread and other things. For example, Crackerbarrel's pure syrup, when I serve them store brands, they say, "This isn't good." I think they maybe spoiled in that aspect!
Anyway, here is the tomato soup recipe. You can substitute basil for dill, but I prefer dill. Also, if you try to use milk or 1/2 and 1/2, it will separate and have a funny texture.
Tomato Dill Soup
3 T. butter or margarineMelt butter in a large saucepan over medium-high heat. Add onion and saute 3-5 minutes or until tender. Stir in diced tomatoes and chicken broth. Transfer half of mixture into container of an electric blender; cover and process until smooth.Return the pureed mixture to saucepan( you can puree it all if you like it real soupy.) Add whipping cream, tomato paste, sugar and pepper; stir well with a wire whisk. Cook over medium heat, stirring occasionally, until thoroughly heated. Ladle into individual soup bowls. Sprinkle with dill weed. Yield: 8 cups
3/4 cup chopped onion
2 (14-1/2 oz.) cans diced tomatoes with Italian herbs
2 cans chicken broth
1 c. whipping cream
3/4 can of tomato paste
1 T. sugar
1/4 t. pepper
dried dill
